Description
Madrid in summer has a new ritual. Calor is the pop-up restaurant that the Life Gourmet Group and chef Ramón Freixa are setting up this summer in the Pelouse of the Hipódromo de la Zarzuela: the most exclusive area of the venue, trackside, with nighttime horse racing in the background. On Thursday and Saturday nights, the Hipódromo transforms. The stands fill up, the horses come out onto the track under the spotlights, and you are in the front row with the Ramón Freixa menu unfolding on your table. Choose how you want to live the experience. In both cases, the cuisine is that of Ramón Freixa, with two Michelin stars and three Repsol suns, and drinks are ordered separately. The menu offers starters such as coca de anchoas de Santoña with smoked butter, foie terrine with mango chutney, caprese burrata injected with basil, vitello tonnato or prawn carpaccio with citrus fruits. Among the main courses, there is iberian presa a la brasa with black garlic, sea bass en papillote with oriental vegetables or tuna tartare with fried egg cream and nori seaweed. And to finish, desserts to remember: crème brûlée with pistachio ice cream, crispy chocolate millefeuille or creamy cheesecake with red fruits.
