*Bømlo salmon gravlax, fennel and carrot salad with pink peppercorns, mango gel
*Honey-roasted sweet potato flan with melted blue goat cheese, toasted brioche.
*IGP South-West foie gras terrine, pineapple and carrot chutney, fruit bread toast.
*Buffalo Mozzarella PDO, thinly sliced 18-month aged Gran Reserva Serrano ham, arugula, candied tomatoes and Kalamata olives.
*Perfect poached egg “Meurette”, Simone style

MAIN COURSES:
*Risotto, red beet coulis, Chioggia and Boldor beet chips, shavings of aged sheep’s milk ricotta
*Bømlo salmon fillet, roasted sweet potato purée, fennel compote, creamy fish stock sauce with Espelette pepper.
*Braised pulled lamb with rich jus, buttery mashed potatoes and glazed vegetables.
*Sorrentina gnocchi, smoked scamorza and San Marzano tomato
*Kuy teav, chicken broth infused with spices, rice noodles, marinated chicken, pan-fried shiitake mushrooms, fresh herbs, and Cambodian condiments.
