STARTERS:

Simone-style soft-cooked egg "meurette", triple-cooked bacon lardons, caramelized pearl onions, sautéed mushrooms, mild red wine sauce.

🌱 Authentic eggplant parmigiana with smoked buffalo scamorza, PDO San Marzano tomato and basil sauce, melted Parmesan.

🌱 Burrata with warm zucchini caponata.

Bømlo tuna gravlax, wakame seaweed salad with sesame.

Small Lyonnaise salad.

MAIN COURSES:

🌱 Risotto with roasted San Marzano tomato purée, smoked burrata, fresh basil oil and Parmesan crisp.

Nam banh chok with coconut curry, shrimp, mackerel marinated and then brûléed.

Beef polpette, porcini mushroom sauce, herb-crushed potatoes, glazed baby carrot.

Seared scallops, creamy herb-roasted pumpkin, warm tabbouleh with vegetables and peanuts, passion fruit dressing.

🌱 Gorgonzola gnocchi gratin with red wine-braised Treviso radicchio and toasted walnuts.

DESSERTS:

Tiramisu with flambéed pear and crunchy praline.
