Description
Have you heard of La Caverne, the crazy, unique project in Paris? The largest organic farm in the heart of the capital has moved into an old underground parking garage in the La Chapelle district. High-end restaurants flock to buy shiitake mushrooms, button mushrooms, and fresh endives, all grown underground in this huge, surreal space. Entirely eco-friendly, the farm now employs 20 full-time people, using an assembly line and its own recycling systems. Other food startups focused on short supply chains have moved into the old parking garage, including edible flowers, salads, and aquaponics equipment.
