Regional dishes

• Salta: Caramelized goat’s cheese with a spicy “humita” (Chef’s recommended pairing: Torrontes)
• Buenos Aires: Lemon marinaded squash, 44ºc hake and fresh herbs (Chef’s recommended pairing: Sauvignon Blanc)
• Patagonia: Wild mushroom crusted lamb with blackberry sauce (Chef’s recommended pairing: Pinot Noir)
• Mendoza: Roasted beef tenderloin, smoked eggplant purée and prune chimichurri (Chef’s recommended pairing: Malbec)

Canapés

• Cold: Tuna Ceviche and Guacamole, Bell pepper and Oregano Fritatta with Amarillo aioli (v), Chorizo, Artichoke and Sunblush tomato
• Hot: Sweet potato fries with crispy kale served in little bamboo cones (v), Provolone cheese, with oregano and red pepper (v), Chaplin con chimichurri – grilled sausage and salsa
