One of the peculiarities of the Italian restaurant business is that it is, very often, a family business. With all that entails: benefits and complexities, from economic and value soundness to the delicacy of generational transition. In a truly unprecedented round table discussion, we brought together four great families of national haute cuisine. To tell not only their private, and unique, stories, but also to draw together a kind of model on how, in our country, we approach the world of hospitality. On stage were the Alajmo family (three Michelin stars, Le Calandre, Rubano-Padova), the Cerea family (three Michelin stars, Da Vittorio, Brusaporto-Bergamo), the Iaccarino family (two Michelin stars, Don Alfonso 1890, Massa Lubrense-Naples) and the Romito family (three Michelin stars, Reale, Castel di Sangro, L'Aquila).
The audience will taste: smoked amberjack, lemongrass zest flour with fava bean smoothie, fennel seeds and garlic mayonnaise from the Iaccarino's; Cerea's paccheri with three "Da Vittorio" tomatoes; Niko Romito's bread with lab ragout; and Alajmo's sweet leavened pastry.

Immerse yourself in the culinary universe of Cook Fest, the food event organized by Corriere della Sera that this year will be dedicated to Italian Lunch. The three-day festival will begin with Cook Breakfasts, talks with tastings together with pastry chefs and bakers, and will conclude with Cook Nights, moments of reflection, show and entertainment, again with final tasting. On Sunday, Oct. 6, the Cook Sunday Lunch will offer iconic dishes from the great families of Italian dining, such as Alaimo, Cerea, Iaccarino and Romito. Among the various activities scheduled for the three-day festival: cooking classes with top chefs, guided tastings with sensory workshops and, for the first time, Wine Schools with thematic insights into wine styles and wine zones. There will be no shortage of Food Talks and interviews Bread, Pizza & Words with exclusive recipe tastings.
