    • Friday, October 4, 7 p.m: To the origins of the classics: history (reasoned) of Italian cuisine with Massimo Montanari - tasting follows

    What is tradition? Is there a monolithic and unchanging "Italian cuisine"? Gastronomy historian Massimo Montanari retraces the origins of some dishes considered "classics"-from saffron rice to pasta alla Norma, via cacio e pepe-while tracing the origins and evolution of our culture at the table. With him, two Michelin-starred chefs Davide Oldani (D'0, Cornaredo) and Ciccio Sultano (Duomo, Ragusa Ibla) will bring and comment on their iconic recipes Zafferano e riso and Pasta alla Norma, while chef-oste Luciano Monosilio will talk about his cacio e pepe.

    The audience will taste the chefs' dishes: Saffron and rice (Davide Oldani), pasta alla Norma (Ciccio Sultano), cacio e pepe (Luciano Monosilio)

    • Saturday, October 5, 8 p.m: The (sweet) side of cooking with Maurizio de Giovanni, Gabriella Genisi, Luigi Biasetto, Sal De Riso 

    Sometimes everyone's madeleine, the dish that triggers our emotions and memories, is a dessert. Or rather, almost all of us have both something sweet and something salty in our taste memory.In this evening we will explore the thread of sweetness that binds us to childhood, both in the writings of two important Italian authors and in the creations of nationally renowned pastry chefs. Maurizio de Giovanni, author of the series of books about the Bastardi di Pizzofalcone and the recent ROBIN FOOD (Slow Food Editore, 2024) and Gabriella Genisi, author of the series of novels about Lolita Lobosco will talk to us about how, in their novels, very often food and remembrance are used as narrative devices, symbols of belonging to the territory and collective memory. Then two great protagonists of the white art, Sal De Riso and Luigi Biasetto will resume their personal thread of memory hunting for the flavors that excite them most, between sweet and savory dishes.

    This is followed by tastings of Luigi Biasetto's chocolates, mignons and macaroons, and fish parmigianina, eggplant and chocolate morsels, and a lemon delight mignon by Sal De Riso.

    Description Immerse yourself in the culinary universe of Cook Fest, the food event organized by Corriere della Sera that this year will be dedicated to Italian Lunch. The three-day festival will begin with Cook Breakfasts, talks with tastings together with pastry chefs and bakers, and will conclude with Cook Nights, moments of reflection, show and entertainment, again with final tasting. On Sunday, Oct. 6, the Cook Sunday Lunch will offer iconic dishes from the great families of Italian dining, such as Alaimo, Cerea, Iaccarino and Romito. Among the various activities scheduled for the three-day festival: cooking classes with top chefs, guided tastings with sensory workshops and, for the first time, Wine Schools with thematic insights into wine styles and wine zones. There will be no shortage of Food Talks and interviews Bread, Pizza & Words with exclusive recipe tastings.
