Description
El Lince, Javi Estévez's new restaurant in Madrid, is a simple tavern with modern décor and attentive service. In it, despite his youth, he demonstrates great professional maturity and has very clear ideas. It stands out for the cook's sensible cuisine, apparently simple, which hides a deep knowledge of the product and the technique. Well-executed popular recipes, including some offal dishes such as sweetbreads and brains. There are also cecina croquettes, tripe, shank, confit ear, boneless trotters... all with the finesse and elegance that characterize Javi Estévez. It is not in vain that the Madrid native was trained in large houses (Villena and El Mesón de Doña Filo, among others), specializing in cooking with offal, before becoming famous for his participation in the television Program Top Chef.
