17th December, 2021: Ally Ayres – Karu Distillery
  • Ally is the head distiller and co-owner of the independent Karu Distillery, hidden in the Devils Wilderness NSW. Her focus is on composing gins using fresh, locally grown and sourced botanicals. She has accumulated over 50 global awards, including the IWSC trophy for best contemporary gin in the world 2021.

14th January, 2022: Holly Klintworth - Bass and Flinders
  • Holly is one of few second-generation distillers in Australia, having taken over from her father to lead Bass & Flinders Distillery. It is an artisanal distillery on the Mornington Peninsula, which merges traditional techniques with new flavours and ingredients, distilling Victorian wine into their spirit.
