Description
Eating sustainably is an important tool to combating a changing climate - but knowing how to eat sustainably can be a daunting task. In this class you will be joined by Hudson Valley Fisheries for a discussion on farmed fish vs. wild fish and all the nuances in between. You'll also discuss sustainable agriculture from soil health to the advantages of growing a biodiverse crop vs. a monocrop. Chef Rae will be creating a floral trout rillette for you to delight in. The cooking class will feature Hudson Valley Fisheries Steelhead Trout. Everyone will go home with 1 pack of cold smoked lox (4oz), 1 pc of hot smoked (4oz) and a 50% from Hudson Valley Fisheries. Prepare to have your mind and taste-buds amazed by this fishy experience.
